Traditional Batangas Lomi Recipe

 Here's a traditional Batangas Lomi recipe — thick, hearty, and perfect for a comforting Filipino meal. Batangas Lomi is known for its thick soup, rich meat toppings, and simple, bold flavors.


🍜 Batangas Lomi Recipe (Good for 4 servings)

Ingredients:

For the broth & noodles:

  • 500g fresh lomi noodles (egg noodles)

  • 1 liter water (or more as needed)

  • 2 tablespoons soy sauce

  • 1 tablespoon fish sauce (optional)

  • 1 small onion, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon oil

  • 250g pork belly or pork shoulder, sliced thinly

  • 100g pork liver, sliced thinly (optional but traditional)

  • 1 piece chicken cube or pork bouillon (optional)

  • Salt and pepper to taste

For thickening:

  • 1/2 cup cornstarch dissolved in 1 cup water (adjust for thickness)

Optional toppings (highly recommended for authentic Batangas style):

  • Kikiam, fried and sliced

  • Fish balls or squid balls

  • Chicharon (crushed)

  • Boiled egg, sliced

  • Hard-boiled quail eggs

  • Fried garlic

  • Spring onions, chopped

  • Calamansi or vinegar with chili (on the side)


🧑‍🍳 Instructions:

  1. Sauté aromatics and meat:

    • In a pot, heat oil and sauté garlic and onion until fragrant.

    • Add pork belly and cook until lightly browned.

    • Add pork liver (if using), and cook for 2–3 minutes.

  2. Make the broth:

    • Add water and bring to a boil.

    • Add soy sauce, fish sauce, bouillon (if using), salt, and pepper.

    • Simmer for about 15–20 minutes, or until meat is tender.

  3. Add noodles:

    • Add fresh lomi noodles and simmer for 5–7 minutes until noodles are soft.

  4. Thicken the soup:

    • Stir in the cornstarch slurry slowly while mixing to avoid lumps.

    • Simmer until the soup thickens to your desired consistency.

  5. Add toppings:

    • Add kikiam, fish balls, quail eggs, and any other toppings.

    • Simmer another 2–3 minutes.

  6. Serve:

    • Pour into bowls and top with chopped spring onions, chicharon, fried garlic.

    • Serve with calamansi or spiced vinegar on the side.


🔥 Tips:

  • Adjust the thickness of the soup by varying the amount of cornstarch slurry.

  • Authentic Batangas Lomi is often very thick — almost like gravy.

  • Serve with toasted bread or pandesal if you want a full meal.
